If only it were that simple. I didn't get into gourmet cheeses before I found out I was allergic to dairy, so now that I'm not attending student group events with free pizza, ice cream is the only cow teat treat I miss. Fortunately, sorbet is a healthier alternative with the right sweetness and texture. And the Vitamin Cottage next to my complex has Tofuti Cuties, so I may need to make a raid soon.

I guess it depends on whether you are lactose intolerant or allergic to casein. Either way, the freezing won't make a difference, but fermenting gets rid of most of the lactose.

I'm pretty sure it's casein, unfortunately. I don't experience bloating and such, but the next day my brain doesn't work very well in an Asperger kind of way. Also, baked goods with butter don't have as bad an effect as other forms.

Mmm...I can eat dairy, but Tofuti Cuties are delicious anyway.
